This is normally the point in my annual, springtime “Dressed to Grill” articles where I make some lame statement like….
“Whew…we made it through another winter, spring is here and life is good again”.
But Man!!! This COVID-19 virus of 2020 hit all of us like an avalanche…
….and life just got more serious that having survived the snow and sleet of winter.
Luckily, I’m an optimist, and my grill on my terrace is like my sanctuary in a world of COVID-19 chaos, grilling is such great self therapy….

The Healthy Chef’s “Healthy Morsel”: Great recipe if using organic ingredients, pasture raised chicken, and grass fed dairy. They do their fries in the oven, but you can easy cut them thicker and do them on the grill, an occasion brushing of the potatoes with olive oil and spices sets the fries out.

The Healthy Chef’s “Healthy Morsel”: No rules, whatever organic veggies you want. Even for meat eaters, organic veggie skewers are amazing once you get your spices right!!! Cook veggie skewers on top of lemon or lime slices so they won’t stick to the grate.

[below] Shrimp Kabobs with Pistachio-Tarragon Pesto
The Healthy Chef’s “Healthy Morsel”: Love to see that tried and true Olive Oil in recipes (seems like it’s becoming extinct 🙁 ). For the shrimp, make sure you get wild caught as opposed to farm raised, as wild caught shrimp are surprisingly very low in mercury and toxins compared to farmed.

The Healthy Chef’s “Healthy Morsel”: I’ll replace that swordfish with sustainably sourced Chilean Sea Bass from Whole Foods, my fav’ thick “steaky” type of fish. Once again, a great grilling tip is to cook fish skewers on top of lemon or lime slices so they won’t stick to the grate.

The Healthy Chef’s “Healthy Morsel”: Scallops are such an underrated seafood as pertains to taste, you gotta try them at least once. Scallops are also very low in mercury. Once again, cook seafood skewers on top of lemon or lime slices so they won’t stick to the grate.
