On the Grill Today: Salisbury Belmont Turkey Burgers
As I always mention as pertains to consuming breads and meat, I operate “outside of the box”, in that, instead of going Grain Free, Gluten Free, and Meatless, I consume papaya enzymes (I make my own capsules), to assist in digesting gluten and animal protein. This allows me to occasionally enjoy these treats.
Salisbury Steak is embedded in my brain from grade school, when it was on of the staples of our cafeteria menu.
I prefer turkey burgers, merely because they are easier on my system than beef, but if you choose beef, make it grass fed beef, which you can easily find stocked at a Whole Foods. Grass Fed Bison is awesome as well, although it cooks a little different from beef and turkey.
This "Dress to Grill" segment, along with a few more custom outdoor kitchens (my culinary porn), is gonna be a recreation of my childhood fav', Salisbury Steak, but with a healthy Cosmopolitan twist, the Salisbury Belmont Turkey Burger….
Salisbury Belmont Turkey Burger
** 2 lbs ground pasture raised turkey (or alternately pasture raised beef or bison, AVOID CONVENTIONAL BEEF, TURKEY, AND CHICKEN…..Whole Foods often stock grass fed, to find pasture raised animal products near you go here)
** 1/4 Cup organic green pepper (chopped)
** 1/4 C organic onion (chopped)
** Handful fresh organic parsley (chopped)
** 1 tsp Pink Himalayan Salt (or alternately Celtic Sea Salt, AVOID TABLE SALT)
** 1/4 tsp Tabasco Sauce (homemade tabasco can be made from 3 ingredients, peppers, Pink Himalayan Salt, and quality vinegar, tabasco recipe here)
** 1/2 tsp. organic thyme
** 4-6 Quality Burger Buns (my current fav is Sami's Bakery Millet and Flax Buns), best when toasted on the grill
Combine in large bowl. Shape into 4 large or 6 average sized patties. Traditionally, Salisbury Steaks are oval shaped and sprinkled lightly with flour then brushed with cooking oil. Broil [or grill] 6-8 minutes on each side, always best to use a food thermometer. Butter buns (with grass fed butter) and toast them on the grill. Place burger on bun, top with Belmont Sauce (recipe below) and sauteed onion & peppers (instructions below)
Belmont Sauce
Original recipe called for half cup of catsup but, catsup is notoriously unhealthy. For healthy grillers, making ketchup is very easy here is a good recipe. Make enough to keep around the house to replace the store bought junk.
Quick "No Cook" Ketchup
1/2 tsp onion powder
1/2 tsp cinnamon
1/2 tsp Onion Powder
1/2 tsp mustard powder
1/2 tsp Pink Himalayan Salt (Avoid Table Salt!!!!!!)
3 tsp apple cider or coconut vinegar
pinch of cloves
pinch of allspice
2 tbsp of organic raw brown sugar
or
2 tbsp (more or less to taste) of Wild Raw Honey such as Manuka
Jar of organic tomato paste (look for those in jars because cans are often still lined with toxic BPA)
…..anyhoo, the rest of the Belmont Sauce ingredients
** 3 Tbsp grass fed butter (melt in saucepan), AVOID CONVENTIONAL BUTTER AND MARGARINE)
** Stir in: 1/2 C homemeade catsup (recipe above)
** 1 Tbsp fresh squeezed organic lemon juice
** 1 tsp Worcestershire sauce (from the original recipe but I omit it because I don't like the ingredient profile of storebought Worcestershire Sauce, I compensate by making a more robust homemade ketchup and tobasco sauce)
** 1 tsp dijon mustard
** 1 tsp homemade tabasco sauce (recipe above in burger ingredients)
**2 Tbsp sherry wine
Bring to a simmer and reduce by 25% or until nicely thickened so it will stick to the burger.
Sauteed Onions & Peppers
3 Tbsp Grass Fed Butter Butter (AVOID CONVENTIONAL BUTTER AND MARGERINE), or alternately, saute in coconut oil
1 Medium Organic Onion Sliced Thin
1/2 a Organic Red Pepper Sliced Thin
1/2 a Organic Green Pepper Sliced Thin
4 Organic Cloves Garlic Minced
Saute onions in butter until almost caramelized. Add Peppers and saute until limp Push veggies aside and add garlic saute until slightly tan. Place on top of burger
…..like I said before, I don't eat a lot of burgers anymore, but I still love to look at a lovely burger. I suppose a lovely burger on a lovely date is like hitting the "daily double", a rare double treat
I learned so much about health and wellness, when that once in a while comes around, I don't have to hold back, I just dive in and go for it. I'm talking about both the burger and the date LOL !!!!
