Pomegranate Sex on the Beach Popsicles
Grapefruit and Strawberry Greyhound Popsicles
Honeydew Cucumber Margarita Popsicles
Pomegranate Sex on the Beach Popsicles
Makes 10 popsicles
12 oz. organic pineapple ( about half of a large pineapple)
3 oz. organic raspberries (about 13 regular-size raspberries)
4 oz. vodka
2 oz. Pama Pomegranate liqueur (or numerous alternates such as Peach Schnaps, Raspberry Liqueur, Peach Liqueur, etc.)
(for virgin popsicles, replace alcohol with POM Pomegranate Juice or Izze Fruit Sodas [see below], for a "hint" of liquor, use an eyedropper for 20 or so drops of vodka and add a "touch" of Liqueur)
Instructions for Sex on the Beach Popsicles
1. Place the pineapple and vodka in a food processor or a blender and process until pureed and well blended. Set aside.
2. Place raspberry and Pama Liqueur in the food processor or a blender and process until pureed and well blended.
3. Pour 1/2 oz of pineapple mixture into each popsicle well, then pour 1 oz of raspberry mixture on top of it. Fill remainder of the popsicle wells with pineapple mixture. Use the narrow handle of a spoon or fork to gently drag raspberry mixture through the pineapple mixture and against the walls of the mold for a soft swirling effect.
4. Place foil on top of popsicle form and cut a tiny hole in the center of each well. Stick popsicle stick through the hole. Freeze for at least 6 hours or until frozen solid. To release popsicles, run hot water on the outside of popsicle molds for 2-3 seconds.
5 F.Y.I., I prefer Stainless Steel Molds, you can get stainless steel popsicle molds at amazon (or alternately, glass molds).

Makes 18 popsicles
8 oz. fresh-squeezed organic grapefruit juice (about a 1lb grapefruit)
12 oz. organic strawberries (about 12 medium strawberries)
5 oz vodka
(for a virgin popsicle add a lime Izze soda [see below] or a robust herbal tea, for a "hint" of alcohol, use an eyedropper and add a desired number of drops of Vodka)
Instructions for Grapefruit and Strawberry Greyhound Popsicles:
1. Place the juiced grapefruit and whole strawberries in a food processor or a blender and process until everything is pureed. Add vodka and process for another 20-30 seconds to blend well. Pour mixture into popsicles mold.
2. Place foil on top of popsicle form and cut a tiny hole in the center of each well. Stick popsicle stick through the whole. Freeze for at least 6 hours or until frozen solid. To release popsicles, run hot water on the outside of popsicle molds for a 2-3 seconds.

Honeydew Cucumber Margarita Popsicles
Makes five 2-and-1/4-oz. popsicles
1 cup organic honeydew juice (approximately a whole melon weighing 1lb)
1/3 cup cucumber juice from organic cucumber(approximately half a cucumber weighing 5oz.)
1/2 cup tequila (for virgin pops, replace with Izze Lime Soda [see below], for a "hint" of tequila, use eyedropper)
1 tablespoon triple sec
1 tablespoon fresh organic lime juice
1 tablespoon mint simple syrup (recipe follows)
3 large organic mint sprigs
Instructions: Honeydew Cucumber Margarita Popsicles
1. Place the honeydew and cucumber in a food processor or a blender and process until everything is pureed. Add tequila, triple sec, lime juice and mint syrup and process for another 20-30 seconds to blend well. Pour mixture into popsicles mold.
2. Freeze for about 2 hours or until mixture starts to solidify enough to hold a popsicle stick upright. Insert popsicle sticks and finish freezing popsicles overnight. To release popsicles run hot water on the outside of popsicle molds for a 2-3 seconds.
Mint Syrup for Honeydew Cucumber Margarita Popsicles
(You will have more syrup than you need. Save for other cocktail uses)
1/2 cup water 1/2 cups Ultimate Sweetener Birch Tree Xylitol (I avoid refined sugar and even corn based Xylitols, Ultimate Sweetener, if it stands the test of time, is the best natural sweetener I have found, same look, feel, and taste as sugar)
1 cup organic mint leaves, loosely packed Instructions for Simple Syrup :
Place Ultimate Sweetener Xylitol and water in a pot over heat until sugar dissolves. Allow mixture to cool to room temperature and place mint leaves in mixture and muddle. Allow mint leaves to steep for 20 minutes. Strain and discard leaves. (Depending on the fineness of the sieve tiny pieces may remain).

Izze Soda as an ingredient substitute: I love Izze Sodas, it works very well if you want to substitute ingredients, or bypass the recipe all together and just add alcohol to the Izze Soda, and add to Popsicle mold. I not a fan of most sodas, if any, but Izze is "acceptable".
Made from fruit juice and sparkling water as the main ingredients, they are beyond tasty. Although I still can't find out what that ingredient simply called "natural flavor" actually is (the issue there is it is impossible for anyone to get an answer from Izze, and thus, it could be anything, including a substance called castoreum, best to look that up to see what castoreum really is) read my article on this issue here, before you decide to drink Izze)
I think they strip the color from the fruit and then replace it via some process (for color consistency I suppose). But, at least they omit the refined sweeteners, High Fructose Corn Syrup, and questionable sweeteners in most sodas.
