The “Personalized”, Coconut Flour Drop Biscuits (grain free, gluten free)

These "ugly duckling", coconut flour biscuits can have a "face that only the cook can love", but personalizing them to whatever tickles your fancy, makes them a beautiful personalized creation..

Currently, my thing is mixing in a few diced herbs such as rosemary and chives, and a little diced apple, and occasionally, some quality grass fed cheese.

And to set out my Sunday Morning "Chill Time" with my biscuits, I will dip them piping hot into a little quality Manuka Honey, in a saucer sprinkled with a little Ceylon Cinnamon. Now that's good eatin', those store bought and fast food, low quality ingredient, albeit perfectly round pretty "conventional" biscuits can't temp me like these drop biscuits…….

Coconut Flour Drop Biscuits

1/3 cup sifted Organic Coconut Flour
¼ cup Unrefined Organic Virgin Coconut Oil or butter
4 pasture raised eggs
¼ cup quality honey (my fav is
Manuka Honey)
¼ teaspoon Pink Himalayan Salt
¼ teaspoon baking powder

Suggestions for personal touch
*Diced Herbs and Diced Organic Apples (my current fav!!!)
*Chocolate Cacao Nibs and Honey (the honey balances out the naturally bitter raw chocolate)
*Grass Fed Cheese, with finely diced quality pasture raised diced cooked turkey sausage
*Diced Pineapple
*Diced Papaya and Lemon Zest with Cinnamon
*Garlic and Quality Grass Fed Cheese
*The list is unlimited!!!!!

Method

Blend together eggs, butter, honey and salt. Combine coconut flour with baking powder and whisk into batter until there are no lumps. Mix in other ingredients if applicable. Drop batter by the spoonful onto a greased cookie sheet. Bake at 205 Degree C (400F) for 14 to 15 minutes. Makes about 8 biscuits.

I like to pour a little Manuka Honey on a saucer and sprinkle in a little Ceylon Cinnamon, and proceed to dip my piping hot biscuits.

Butter is not a sin, but one should try butter from grass fed cattle. Not only healthier, but incredible taste!!!

Pasture raised eggs are perhaps one of the most digestible and processable forms of non-plant protein.

Coconut flour is high in fiber and is said to assist in lowering risk of heart disease.

The essential oils in Ceylon Cinnamon, combined with the Hydrogen Peroxide from real raw honey, when combined, are an incredibly powerful combination in fighting ailments and diseases.

Pink Himalayan Salt is a totally different animal than table salt, in that it contains 84 minerals in perfect balance.

EAT HEALTHY, BUT ENJOY WHAT YOU EAT!!!!!.

These look delicious! Would they still work without the honey? What would be a good substitute (for texture, I don't need the sweetness)?

Wow that’s a good question, not sure what that would be, although I have seen drop biscuit recipes and other coconut flout recipes for pancakes and such without honey, so I say just leave it out. I don’t think texture will be affected.
